Let’s understand recipes of India

A recipe is a combined set of directions used to cook special cuisines. The term recipe somehow is also used in medicinal preparations. Recipe books not only consist of directions but also the correct amount of ingredients used in the preparation of such cuisines. The earliest known written recipe date to 1730 BC found in Mesopotamia. Other early recipes date from 1600BC and come from Babylonia. 

Types of Recipes:

The type of recipe basically depends on the type of cuisine to be prepared. For example, if someone wants to prepare a south Indian cuisine the recipe used will be termed as south Indian recipe. Some of the major food recipes are:

• North Indian Recipe

North Indian Recipe basically consists of the set of instructions to prepare popular dishes of the north Indian states such as Jammu & Kashmir, Punjab, Bihar, Himachal Pradesh, Haryana, Delhi, Rajasthan, and so on. The cuisines of these states mostly are Kashmiri pulao, Chhole-Bhature, LittiChokha, ChanaMadra, KairSangrikiSabzi, Chhole-Kulche, DaalBaati respectively.

North Indian Recipe

• South Indian Recipe

South Indian recipe basically consists of the set of instructions to prepare popular dishes of South Indian states such as Tamil Nadu, Kerala, Andhra Pradesh, Karnataka, Maharashtra, etc. The cuisines of these states mostly are Idlisambhar, Appam, KandhiPodi, BisiBeleBhathMissipav, and so on.

• Continental Recipe

Continental recipe refers to the set of instructions to prepare cuisines popular in European countries and other western countries. The major continental cuisines are:

1. Spanish Cuisine: Spanish cuisines consist of traditional food in Spain. The major ingredient used in Spanish cuisines is olive oil. The most commonly used herbs in Spanish cuisines are parsley, oregano, rosemary, and thyme. Some of the major Spanish foods are Croquetas, Tortilla Espanola, Gazpacho, Pisto.

2. Italian Cuisine: Italian cuisine is a Mediterranean cuisine. The most common ingredients are tomatoes, potatoes, capsicum, maize, and sugar beet. The most popular Italian dishes are pizza Margherita, spaghetti, pasta.

3. French Cuisines: French cuisines consist of cooking traditions from France. French cuisines developed throughout the ages influenced by several surrounding cultures of Spain, Italy, Switzerland, Germany in addition to its own cooking traditions. Some of the essential ingredients of French cuisine are olive oil, French bread, Dijon mustard, truffle. Popular dishes of France are potato dauphinoise, boeuf bourguignon, cassoulet.

4. English cuisine: English cuisines comprised of cooking traditions associated with England. However, English dishes consist of ingredients and recipe ideas from America, China, and India. Some of the key ingredients of English cuisine are haddock, mint sauce, malt vinegar, meat. Some of the famous English dishes are Bedfordshire clanger, beef wellington, game pie, pastry, pease pudding, pork pie.

5. Mexican Cuisine: Mexican cuisine consists of cooking traditions from the modern state of Mexico. Mexican cuisine is the most popular because of its street foods. Mexican cuisine is a complex and ancient cuisine developed through various techniques and skills over the ages. Mexican street foods basically include tacos, quesadillas, pambazos, tamales, al pastor.

Components of Recipe:

Modern cooking recipes mostly consists of several components-

• Name of the recipe- Origin and history of the dish

• Yield- The number of servings that the dish provides

• List of all ingredients according to the order of its use

• Listing ingredients according to the quantity

• Essential equipment used for preparing the dish

• Cooking process-temperature & baking time (if necessary)

• Serving protocols

• Review of the dish

• Nutritional value

Revolution of Recipes:

In the early ages, there were books recommended for the recipe requirement. By the early 20th century after the invention of television, the next revolution came in the form of cooking shows and daily TV tutorials. The tutorials and the TV shows mainly focused on the visual depiction of the set of instructions which were early mentioned in the respective recipe books.
